Grease Fires and Fire Suppression: The Hidden Risk in Commercial Kitchens

Cooking oil fires are the leading source of restaurant fires, and most of the risk builds quietly shift after shift.

Ask most line cooks what scares them in the kitchen and grease fires rarely top the list — they're too familiar to feel dangerous. That familiarity is exactly the problem. Cooking oil fires are the single most common source of restaurant fires, and they behave differently than the kind of fire most people picture, which is part of why they catch even experienced staff off guard.

Why water is never the answer

This is worth repeating even to seasoned kitchen staff: water and burning oil is a dangerous combination. Water is denser than oil, so it sinks beneath the surface and instantly flashes to steam, blasting burning oil upward and outward in every direction. What starts as a contained fire on a stovetop can become a fire across the whole cook line in seconds. It's one of the most common mistakes we hear about after the fact.

The right response to a small grease fire on a stovetop is to cut the heat and smother it with a metal lid, or use a Class K extinguisher if it's beyond that. Never water. Never a general-purpose fire extinguisher rated for wood or paper — it can actually make an oil fire worse.

Where grease quietly builds up

The biggest fires often start in places nobody's actively cooking — exhaust hoods, ductwork, and the grease traps and filters that collect residue shift after shift. A hood that isn't cleaned on schedule becomes a fuel source of its own, feeding a fire that starts at the cooktop and turns it into something that travels through your ventilation system.

  • Hood and duct cleaning should follow NFPA 96 guidelines — typically quarterly for high-volume kitchens, less often for lighter-use spaces.
  • Filters need regular cleaning or swapping, not just a rinse when they look bad.
  • Fryer oil should be filtered and changed on a schedule that matches your volume, since degraded oil can smoke and ignite at lower temperatures than fresh oil.

A clean hood isn't about appearances. It's the difference between a contained flare-up and a fire that spreads through your ductwork.

Training matters as much as equipment

The best suppression system in the world doesn't help if the person standing at the fryer doesn't know where the pull station is or panics and reaches for water. A short, repeated training — walking new hires through where the manual pull station is, how the Class K extinguisher works, and what NOT to do — takes fifteen minutes and pays for itself the one time it matters.

  1. Know where your manual suppression pull station is, and make sure every kitchen shift includes someone who does.
  2. Keep your Class K extinguisher visible and unblocked near the fry station.
  3. Stick to a hood, duct, and filter cleaning schedule — and keep the receipts.
  4. Train new hires on grease fire response in their first week, not "eventually."

If your hood cleaning has lapsed, or your staff has never actually walked through what to do in the first thirty seconds of a grease fire, that's worth fixing before your next rush — not after an incident.
